Carrie Underwood had eaten vegetarian for years, and she recently made the leap to vegan. (Here’s what you should know before you go veg!) She’s not “1,000% vegan,” she says, and has been known to make exceptions for Christmas and Doritos. Carrie, if you’re reading this, you’ll love these Dorito recipes!

But for the most part, this star’s diet is the perfect combo of healthy and delish. Here’s what Carrie eats every day…

Quesadillas

Carrie usually makes dinner with her husband, Mike Fisher, a former NHL player. She uses Daiya-brand vegan cheese and beans to make a delicious and healthy quesadilla. (She puts fresh salsa on everything, too!)

Fruit & Nut Bars

For a power-up snack, Carrie will reach in her bag for a Raw Revolution bar, made with hemp protein, flaxseeds, fruit and nuts. This version has walnuts and raisins, plus honey for extra health benefits.

Blueberry Muffins

For a healthy-ish treat, Carrie likes to keep blueberry muffins around. This version is chock-full of blueberry flavor, and includes oats for extra oomph!

Vegetable Stir Fry

Carrie will stock up on stir-fry ingredients, including fresh veg and lots of onions and garlic. She puts onions and garlic in everything–who knew?

Spaghetti Squash

For dinner, you can count on Carrie to roast spaghetti squash. She loves that it’s super-easy to make. (Same!) This version has black beans, avocado and salsa, more of her favorite foods.

Dairy-Free Ice Cream

When she’s craving a sugary snack, Carrie will check her freezer for non-dairy ice cream. We’d love to treat her to this Chunky Banana Cream Freeze, which is loaded with bananas and almond milk!

Bean & Rice Burritos

Carrie is constantly on the run, whether she’s rushing to the recording studio or needs to drop her son Isaiah off at daycare. To make sure she’s got a Plan B for healthy meals, she keeps a stash of “emergency” burritos in the freezer.

Roasted Vegetables

She prefers to do her own grocery shopping and cook at home, rather than eat at a restaurant or order take-out. Carrie sticks with the basics, including roasted vegetables. We’ll definitely send her this recipe!

Veggie Straws

For a snack or side dish, Carrie will grab a handful of crunchy Veggie Straws. She’d love our Beet and Sweet Potato Fries, oven-baked with olive oil and sea salt to have a similar satisfying crisp.

Breakfast Skillet

For a protein-packed breakfast, Carrie likes to make a tofu skillet. She keeps chopped bell peppers and onions in the fridge, throws ’em in some coconut oil, adds tofu and tops with fresh salsa. (To make a vegan version, skip the eggs.)
