Experience

Ian is the front-of-house partner at House of Guinness, his family's Irish pub in Waukesha, Wisconsin. There, you can find a seasonal cocktail menu, more than 200 bottles of whiskey and, yes, Guinness on draught.

Prior to buying the House in 2017, Ian helped launch six bars and restaurants in Wisconsin and New York, and developed one of Milwaukee's first draft cocktail menus. He's worked at a variety of establishments, including a steakhouse, a burger joint, an Italian eatery and a Todd English restaurant.

When he's not making his own bitters, you can likely find Ian in the kitchen, cooking for his wife and son. If not, he's probably playing hockey or D&D, or riding his bike around Milwaukee in search of a good cup of tea.
