Submitted to Taste of Home by Ellen Bower of Maryland, this recipe has all the flavor of the popular brunch dish, but it’s much simpler to make. Ellen explains, “I like omelets but don’t always have time to stand by the stove. That’s why I favor this oven-baked variety that I can quickly pop into the oven at a moment’s notice.” By skipping the skillet, you don’t have to worry about gently coaxing your eggs to perfection. Sure, it might not technically be an “omelet” anymore-but we dig this hands-off approach for busy mornings.
The recipe uses basic ingredients you might already have on hand: eggs, sliced ham, green peppers, onions and cheese. To prep, simply whisk the eggs with half and half in a bowl. Dump in the rest of the ingredients and stir ’em up. Transfer the mix to your trusty 9×9 baking dish, cook for 25 minutes and voila-breakfast is ready!
