When you’re looking for a comforting meal that keeps everyone in the family happy, pasta’s a pretty safe bet-especially when it’s stuffed with three kinds of cheese and smothered in a rich, tomato-y meat sauce. These Italian-Stuffed Shells were adapted by Beverly Austin of Fulton, Missouri, after a friend brought them over in a casserole dish. After one taste, Beverly never looked back: “Now I take it to other friends’ homes and to potlucks, because it’s always a big hit,” she says. What lucky friends she has!
Of course, you don’t have to wait for a pal like Beverly to bring you this bubbly, cheesy dish. It’s super easy to make yourself. Or even better: get the kids involved! They’ll love helping stuff the shells with the delicious blend of Parmesan, mozzarella and cottage cheese. It all bakes up in a 13×9 pan, so it’s simple serve at dinner or bring to a big potluck, just like the rest of our favorite foolproof ground beef casseroles. Just be ready to hand out the recipe when the happy eaters line up for it!
