When you’ve got a house full of guests-or even just a big family to feed-making breakfast can feel like a chore. It’s hard to whip up a cozy meal that the whole crowd can enjoy without having to wake up before the rooster crows. Thankfully, Nancy Schmidt of Center, Colorado, came up with this hearty Farmer’s Casserole recipe.
It’s loaded with the good stuff and is super easy to prep. Nancy says, “This casserole is handy-you can put it together the night before, let the flavors blend, then bake it in the morning.” We love that it takes the guesswork out of breakfast (and lets us sleep in with the rest of the gang.)
We’re all about the make-ahead prep, but you just gotta love that this super easy casserole has all the flavors of a full country breakfast. It’s packed with eggs, hashbrowns, ham, green onions and cheese. The flavors come together beautifully in one pretty dish, much like our other favorite breakfasts and brunches made in a 13×9 pan.
The best part? You don’t have to wake up with the farmers to enjoy it.
