Home cook Beth Notaro sent the Taste of Home Test Kitchen this recipe for the perfect breakfast bake-the Amish Breakfast Casserole. Beth had tasted a similar version of the dish during her visit to an Amish inn. She recalls, “When I asked for the recipe, one of the ladies told me the ingredients right off the top of her head.” She tinkered with the recipe to create a version her family loved and generously shared with us.
The casserole only uses a handful of ingredients (most of which you probably have in the fridge) and the steps are to simple. Simply combine cooked bacon, onion, cheese, and eggs, add to your handy 13×9 and pop it into the oven for about 40 minutes. We love that, rather than being glued to a hot skillet, you can walk away while your meal cooks. (Time to get dressed or read the paper with coffee!)
