Baking cookies with my mom is a favorite childhood memory. I loved mixing the dough, decorating sugar cookies and, of course, snacking on extra chocolate chips. My 8-year-old self would have loved these rainbow chip cookies—my present-day self certainly does!
They’re great to make with kids because the steps are easy and they’re rainbow colored. Plus, even though this is a shortcut recipe, it’s definitely a step up from the average chocolate chip cookie (though we love those, too).
How to Make Rainbow Chip Cookies
These rainbow cookies are light and fluffy, and it’s hard to stop at just one. Good thing this recipe makes 1-1/2 dozen!
- 2 eggs
- 1/4 cup vegetable oil
- 1/2 teaspoon vanilla
- 1 package Rainbow Chip cake mix
- 1/4 cup crunchy rainbow sprinkles (we like Wilton’s)
Step 1: Mix it up
As always, preheat your oven to 350ºF before you begin. This recipe is so easy, the batter may be ready even before the oven is fully heated!
Mix the eggs, oil and vanilla. Then, add the cake mix. Once everything is combined, add the sprinkles and mix by hand. There are sprinkles in the cake mix, but the additional sprinkles add more color and a nice crunch.
Step 2: Bake
Using a cookie scoop (this one’s our go-to), drop dough onto a greased baking sheet. Bake for 10-12 minutes. Remove from pans after a few minutes to wire racks to cool completely.
That’s it! I told you it was easy. And boy, are they tasty. My husband said it was like eating a cloud, which I can only imagine is a good thing.
If you want even more color, press some sprinkles on the cookies as soon as they come out of the oven. Make sure you really press them in so they don’t just roll off. Just be careful because the cookies will be hot. But doing this does add more color…and who doesn’t love a few extra sprinkles?
