No Oven? No Problem

Submitted by contributor Shauna Havey of Roy, Utah, this recipe combines a slightly sweet dough with herby pesto for a loaf that cooks with ease in the slow cooker. Shauna says this is one of her favorite bread recipes because it doesn’t need to bake in the oven, which is handy when she needs it to roast her main dish or when it’s especially hot outside. Plus, it’s prettier than any dinner rolls, making it a go-to when she’s having a dinner party or hosting a holiday.

Impressing the Experts

Even our Test Kitchen was wow-ed by this bread. While testing the recipe, the staff loved that the loaf had crispy, browned edges as if it was baked in the oven. This is rare for something made a slow cooker. Thanks to a ribbon of pesto, the loaf had a tender, flavorful crumb. The testers also liked that the ingredients could easily be substituted to the maker’s liking; switching out sweet potato puree for canned pumpkin, mozzarella or asiago for parmesan and sun-dried tomato pesto for basil pesto.
