In my eight-year tenure as a Taste of Home editor, I’ve had the privilege of trying (and sharing with you!) many delicious bites. From gourmet cocktail cherries to an ice cream of the month club, I’ve tried just about every type of sweet treat you can get delivered to your door.
All that’s to say: It takes a lot to impress me. And yet one of my favorite cookie brands, Levain Bakery, did just that.
Say hello to the new Levain carrot cake cookies. Also known as the only dessert I want to eat this spring!

What are Levain carrot cake cookies?
Levain carrot cake cookies transform the richness and warmth from our favorite Easter cake into behemoth, bakery-style cookies. Each treat starts with a spiced dough, then gets studded with mix-ins—including grated carrots, apricots, white chocolate chips and pecans.
How We Tested Them
To say I was excited when I first heard about these cookies is an understatement. They combine two of my all-time favorite desserts: carrot cake and Levain cookies. So, when that iconic blue box arrived on my doorstep on a bleary spring day, I was eager to dig in.
Aesthetically, Levain cookies are pretty perfect. They’re uber-thick with rustic, crispy edges. They also ship beautifully—I have never received a broken cookie, even when testing the cookie of the month club.

I unwrapped the blue ribbon and cellophane, then admired all the mix-ins. It’s easy to see the white chocolate chips and chunks of apricot. And when cut in half, the cross-section revealed specks of carrot.
Now, you can either eat Levain cookies straight out of the box or warm them in a 350-degree oven for 3-6 minutes. I, apparently, have no self-control because I had to take a bite immediately.
When I say this is my perfect cookie, I mean it. It was sweet without being cloying. The mix-ins added a little bit of everything: crunch from the pecans, brightness from the apricots and creaminess from the white chocolate. Plus, the carrots kept the crumb moist without being overly gooey.

Most importantly? They’re surprisingly light. Over the years, I’ve had the privilege of trying just about every Levain flavor. (Hello, coffee toffee!) They almost all contain chocolate, which, of course, is delicious. But some bites can be almost too rich. I love that the carrot cake cookies offer a fresher bite—perfect for spring.
I fully expect these to be a mainstay on my Easter and Mother’s Day tables. And heck, they’re so good I might even order them as a “cake” for my May birthday. If you love thick, scone-like cookies and spring flavors, this is the treat for you.
