I have a confession: I’m not a huge fan of stainless steel cookware. I admire our brilliant kitchen pros who use it for everything from frittatas to steaks, but when I try it at home, food sticks so badly that cleanup becomes a next-to-impossible chore. That said, I’ve always appreciated the durability, heat retention and—let’s be honest—the kitchen clout that comes with using stainless steel.

If you’re like me, hybrid cookware might be the solution. It combines the ease of ceramic nonstick with the durability of stainless steel. That’s why I was excited when GreenPan announced the launch of its new hybrid line: the Spectra cookware collection. The brand just dropped a 10-piece set, which is already earning praise for its sleek design and nonstick performance. I was lucky enough to get my hands on a set, and I am already impressed.

What is GreenPan’s new Spectra cookware?

Spectra is GreenPan’s latest addition to its collection of nonstick, nontoxic ceramic cookware. The new line is made from 3-ply stainless steel with an aluminum core, offering durability and a polished finish. Much like other GreenPan products, Spectra touts the brand’s signature Thermalon ceramic coating, which prevents food from sticking without relying on harmful chemicals.

What sets Spectra cookware apart is a stainless steel pattern etched into the top layer of each pan. It’s designed to improve searing while making it easier for food to release, making it a true Goldilocks in the kitchen. We’re excited to see how it stacks up against HexClad, an editor-recommended competitor that offers a similar hybrid skillet.

Spectra can be used on all cooktops, including induction, and is oven-safe up to 600 degrees Fahrenheit (lids up to 425 degrees).

Editor’s note: I was recently sent a sample of GreenPan’s 10-piece set and have started testing it in my own kitchen. So far, I’ve been impressed with how quickly the pans heat up and how effortlessly food slides off. Cleanup is quick and easy, too. Plus, the stainless steel finish looks luxe on my stovetop. I’m excited to see how it holds up over time.

About GreenPan’s Ceramic Cookware

GreenPan is best known for its high-performance ceramic cookware, all marketed as free of harmful PFAS, PFOA, lead and cadmium. That makes it a safer alternative to traditional nonstick coatings like Teflon that have raised health concerns in recent years.

That said, ceramic cookware traditionally isn’t designed for prolonged exposure to high heat. For best use, GreenPan recommends always preheating before adding oil or butter and cooking over low to medium heat.

And while we haven’t yet put GreenPan’s Spectra line through its paces, we’ve tested the brand’s ceramic cookware extensively at Taste of Home. In fact, after testing over 17 brands, we rated the GreenPan Valencia pan as our top pick for the best ceramic cookware.
