Is there anything I can substitute? —R.N., Port St. Lucie, FloridaUnfortunately, lemon, orange and other citrus fruits have such a unique flavor that there really is no good substitute. Because citrus is an acidic ingredient, you could try substituting another acid, such as vinegar, cider vinegar or a fruit- or herb-flavored vinegar, in equal amounts called for. But keep in mind that the vinegar will add a different twist to the recipe. Occasionally, orange, lemon or lime peel can be eliminated from a recipe without changing the results too much. Generally, however, citrus is an integral flavor ingredient and eliminating it will affect the taste of the dish.
