What I love most about brunch is its way of blurring lines. It’s the one meal where a drink can double as a course. I mean, have you ever had a tiny slider as a Bloody Mary garnish?! And what better way to get your fruit serving in than a berry sangria? Every so often, something slightly unexpected just…works. Which is why I fell hard and fast for this delicious breakfast-in-a-glass cocktail.

What is a boiled egg cocktail?

This breakfast sipper is a chilled orange juice-based cocktail, served with a peeled, hard-boiled egg placed directly into the drink. Orange juice and eggs have always shared the same space at breakfast, each doing its own job. Here, they simply occupy the same glass, turning what would normally just be a drink into something a little more complete.

Of course, I had to try this for myself because I was curious about how to go about drinking it. Eat the egg first and then sip the cocktail? I found that taking a sip and then a bite and then another sip was more fun. The brightness of the juice resets the palate, while the egg brings just enough substance to make the whole thing feel balanced.

  • Use a fork: Since the egg isn’t served on a toothpick like typical garnishes, it might be best to serve this drink with a cocktail fork.

No, we are not putting hard-boiled eggs in cocktails. What you’re actually seeing is an edible illusion, created by freezing coconut milk into an egg-shaped “white,” then adding a mango juice “yolk” at the center. Once dropped into a drink, it looks uncannily real—but melts into a bright, creamy drink that sounds far more appealing than hard-boiled eggs in orange juice.
