We Tried the Biscoff Cookie Butter Ice Cream at Target—and We’re Obsessed

Cookie butter fans, listen up. You’re in for a frozen treat! Lotus Bakeries, the creator of Speculoos cookies, is rolling out Biscoff ice cream pints and bars all across the U.S.
What Is Cookie Butter?
If you’re not already in the know, cookie butter only made its way to the U.S. in 2011, but Europeans have been enjoying it for much longer. (Lotus Bakeries is based in Belgium.) Made from ground-up Speculoos cookies, which have a taste reminiscent of gingerbread, it’s no surprise these aromatic baked goods are a favorite around the world.
What Flavors Can We Get?
Biscoff ice cream is studded with cookie bits and swirled with cookie butter. Then, to take their offerings beyond the Original flavor, Lotus Bakeries adds one of these unique flavors to the pint:
- Chocolate Brownie
- Salted Caramel
- Belgian Chocolate Chip
- Blueberry Cheesecake
What Does It Taste Like?
We were lucky enough to sample all five of the new flavors, and each bite took us straight to cookie butter heaven. The Original pint was a crowd favorite, winning one tester over with its ample supply of cookie bits. Another tester couldn’t get enough of the Chocolate Brownie flavor—but be warned, it’s very rich. We couldn’t enjoy more than a few bites before feeling satisfied. All in all, every flavor was rich, creamy and oh-so-indulgent—and we definitely plan to pick up a few pints on our next Target run.
There Are Bars, Too
As for the bars, which first arrived in the U.K. earlier this year, original cookie butter ice cream is dipped in a layer of cookie butter before being dipped again in a layer of Belgian chocolate.

Where Can We Find Them?
The wait is over, because these creamy flavors are already at Target. Every 16-oz. container will only cost you $4.49, and they’re all available on Target’s website. A few eagle-eyed fans, like Instagram user @CandyHunting, have already spotted four of the five flavors in the freezer section, so you should take a peek the next time you roll through for your groceries. We recommend you buy all of them in one fell swoop, but that’s just the craving talking.
