Finding the Best Pancake Mix

You know the drill: It’s Sunday morning and everyone’s ready for a special weekend breakfast. If you’re heading off to church or have things to do and people to see, you might not want to whip up a whole breakfast from scratch, so you reach for some pancake mix. Who can blame you? These mixes deliver reliable results and with just a few extras—like warming spices and pecans—a plain box of pancake mix can deliver incredible results. It’s our Test Kitchen’s favorite shortcut ingredient for these super-indulgent carrot cake pancakes.

However, not all pancakes mixes are the same. To avoid any disappointment, our Test Kitchen experts took it up on themselves to test ten kinds of pancake mix to find the best brand. They prepped the pancakes according to the packages’ instructions and judged them blindly with these qualities in mind:

First Place: Aunt Jemima

Pancake classic Aunt Jemima scored universally high marks in every single category. This mix produced perfectly fluffly pancakes that managed to have substance without being overly dense. These pancakes looked beautiful with a golden brown exterior (with just the slightest crispness—yum!) and fluffy interior. They were flavorsome with a hint of sweetness that only improved with the addition of butter and syrup.

Second Place: Great Value

In a very close second came Walmart’s Great Value brand. This option also gave us satisfying results—a light, airy texture, a good thickness and beautiful appearance—with a lower price tag. This brand scored high marks in our flavor category, and isn’t that what’s most important?

Third Place: Bisquick

Of course, the biggest name in pancakes ranked among our favorite brands! Bisquick produced thick, cakey pancake with a satisfying texture. The spongy-yet-tender pancakes are exactly what you need for soaking up every last drop of syrup. Testers also agreed that this pancake was a bit plain, but that only makes it a great canvas to build upon.
