Second-Day Salmon

When we’re hungry for salmon, we usually buy more fresh fillets than we can eat for dinner. We grill all of it, so we’re sure to have leftovers to make salmon cakes the next day. The marinade and spices we use before cooking lend great flavor to the grilled salmon, so the salmon cakes taste much better than those made with canned salmon. —Bonny Salmeri, Seminole, Florida
