Looking for a tasty alternative to meat-and-potatoes meals? Try Vegetarian Linguine. The colorful pasta dish was the brainchild of Jane Bone’s oldest son. The Cape Coral, Florida cook says this stick-to-the-ribs supper takes advantage of fresh mushrooms, zucchini and other vegetables as well as basil and provolone cheese.
Laura Schimanski of Coaldale, Alberta came up with Chicken Stroganoff, a variation on beef Stroganoff, as a way to use up roasted chicken. It was a hit! "I’m usually the only one in my family who enjoys noodles," admits Laura, "but even our son will have more when they’re topped with the creamy chicken."
"My mother gave me the recipe for Savory Sausage and Peppers that’s loaded with colorful pepper chunks," says Rickey Madden from Americus, Georgia. "I like to use a soup mix that adds a hint of garlic, but you can substitute other varieties to suit your family’s tastes."
