Roasted Veggie Pasta Salad (shown at right) from our Test Kitchen features oven-roasted vegetables mixed with pasta and salad dressing. It makes a tasty meatless entree that will be a welcome addition to your dinner table.

To prepare her colorful meal, Margaret Pache "shops" in her Mesa, Arizona backyard. She finds the fresh garden vegetables and oranges (she has her own tree!) that spark the ham's hearty flavor in Sliced Ham with Roasted Vegetables. "It's my family's favorite main dish," she says.
