Pasta Dinner Has Special Appeal
If you ask Jodi Trigg about her favorite pastime, you can bet she'll probably put cooking at the top of her list. The Toledo, Illinois reader loves to cook, and the reason is extremely simple. "I like trying new recipes because I have a son who likes to eat," Jodi explains.
For this full-time factory worker and mom to son Wyatt, preparing dinners around a busy schedule definitely means having a plan. "I map out all of our meals a week in advance and then go grocery shopping," Jodi says. Sometimes, she cooks for as many as eight family members and friends, so preparing stress-free, delicious menus is a must.
When not at work or in the kitchen, Jodi loves to volunteer at Wyatt's school. "They often have breakfast fund-raisers," she says. "I always enjoy helping out." She also likes to read and scrapbook. On warm days, she makes time for several outdoor summer activities like softball, volleyball and riding bikes with Wyatt.
And nothing says summer to Jodi like fresh produce and festive family meals. "I use the freshest fruits and vegetables in recipes I can," she says. So it's no surprise that the menu she shares here features fresh summer produce at its peak.
Jodi starts this quick and tasty meal with fanciful Triple-Berry Spinach Salad. A homemade Dijon mustard dressing flavors the summery salad, which has three kinds of berries.
With only five ingredients and water, Jodi's main course, Bow Ties with Asparagus and Prosciutto, is as easy as it is elegant. "Add a dash of nutmeg for a change of pace," Jodi suggests.
Dessert is delectable when Jodi's Praline-Peach Brownie Sundaes are on the menu. She dresses up store-bought brownies and ice cream with a rich peach sauce that's absolutely wonderful. Pecans add a bit of crunch to these frosty treats that make a sweet ending to any warm summer night's supper.
