Linda Coleman of Cedar Rapids, Iowa knows the importance of a quick, well-rounded meal. "When you have three extremely active children, ages 5, 8 and 9, that need to be in three different places at once, there's no time for elaborate meals," she writes.
Although Linda doesn't have time for fussy dinners, she makes an effort to provide her family with quality meals. "I don't want to compromise on giving my family a wholesome dinner, so I have a range of dishes I can prepare and cook in 30 minutes or less." Here's a few of them!
Linda turns regular chicken into a savory dish with barbecue sauce, crisp bacon and melty cheese. Her Monterey Barbecued Chicken gets even better with a sprinkling of fresh tomatoes and green onions.
That barbecue flavor keeps on going with Linda's In-a-Flash Beans. No one will guess this recipe begins in a can. Chopped onions and green pepper lend a little crunch and lots of home-cooked flavor.
Strawberry Pound Cake Dessert adds a pretty and refreshing finish to Linda's meal. This simple, classic dessert comes together in moments and adds a pop of color.
"With this menu, even if I'm not hurrying to take the kids somewhere, I can fix it and rush out to do one of my passions-habitat gardening," says Linda.
TIP: "I like to have all the items I need to prepare a meal sitting out before I begin cooking. Then I don't have to waste valuable time searching."
