EGG SALAD is a refreshing, tasty change from lunch meat or peanut butter sandwiches. The extra preparation time is worth the effort. Everyone raves about this version with its added zip. It's the touch of mustard and lemon juice that does it. -Annemarie Pietila, Farmington Hills, Michigan

"I've been trying to find a good egg salad recipe and I think I just found it. I made it for our lunch today and it is delicious. I did add some celery as several reviewers mentioned. This is so good and one I will continue to prepare. I highly recommend this recipe as a Volunteer Field Editor for Taste of Home."

"quick, easy, yummy. I didn't add the onions because I'm not a fan. Next time I will use celery instead. Perfect way to use leftover Easter eggs. I didn't have to add any salt or pepper, but that's my personal preference."

"Great egg salad. It's like eating deviled eggs in a bowl. We really enjoyed it."

"I made this for lunch today, after Easter I had some extra hard boiled eggs. It was great! It was simple and I loved what the lemon juice did it. Will definitely make again! Thanks for sharing!"

"I've been looking for a good basic egg salad sandwich recipe. It's surprising how hard it is to find one that doesn't taste a little off. This one fits the bill."

"Increased amounts for fellowship buffet. The lemon juice is the zippy ingredient; just a little remaining in serving dish. Quite good & I'll make it again."

"I liked this recipe but wouldn't call it zippy at all! I used Miracle Whip, extra mustard, and put pickles on the sandwich and still wanted more tang. I also added chopped celery and regular onion because I didn't have green onion. Next time, I will add some horseradish. Finally, I don't think this recipe makes 2 servings. I had to triple it to make enough for my husband and myself. He is a big eater but even with tripling it, we didn't have much leftover. All in all, its good but not at all zippy!"

"I use Miracle Whip instead of mayonnaise and pickle juice instead of lemon juice. I also add finely diced celery. Use dill pickle juice if you like or bread and butter pickle juice if you like a sweeter taste. For extra zip you could use pickle juice that is sweet but spicy. Experiment."
