I'VE BEEN a vegetarian for over 20 years and often experiment with flavors compatible to the many vegetables I prepare. My nephew, who lived with me a year while going to graduate school, thought this was one of my best creations. Ingredients

  • 4 cups fresh broccoli florets
  • 1/4 cup water
  • 2 teaspoons olive oil
  • 1 to 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • Dash crushed red pepper flakes

Nutritional Facts

1/2 cup: 42 calories, 3g fat (0 saturated fat), 0 cholesterol, 49mg sodium, 4g carbohydrate (1g sugars, 2g fiber), 2g protein. Diabetic Exchanges: 1 vegetable, 1/2 fat.

Directions

  1. Place first five ingredients in a large saucepan; bring to a boil. Reduce heat; simmer, covered, until broccoli is crisp-tender, 5 minutes. Drain. Toss with pepper flakes. Yield: 4 servings.

"Blander than expected. I used the pepper flakes, but somehow it did not enhance the flavor of the broccoli. Maybe more salt, or garlic? I love broccoli, so will play around with this recipe next time."
