Yummy Guacamole Recipe
- 2 medium ripe avocados, peeled and pitted
- 3 tablespoons mayonnaise
- 1 plum tomato, chopped
- 1 jalapeno pepper, seeded and chopped
- 2 tablespoons minced fresh cilantro
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- Corn chips
- 1. In a small bowl, mash the avocados and mayonnaise until smooth. Stir in the tomato, jalapeno, cilantro, lemon juice and salt. Serve with corn chips. Yield: 1-1/2 cups.
2 tablespoons: 78 calories, 8g fat (1g saturated fat), 1mg cholesterol, 72mg sodium, 2g carbohydrate (0 sugars, 2g fiber), 1g protein.
