  • 2 medium ripe avocados, peeled and pitted
  • 3 tablespoons mayonnaise
  • 1 plum tomato, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 2 tablespoons minced fresh cilantro
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • Corn chips

Nutritional Facts

1 serving (2 tablespoons) equals 78 calories, 8 g fat (1 g saturated fat), 1 mg cholesterol, 72 mg sodium, 2 g carbohydrate, 2 g fiber, 1 g protein.


  1. In a small bowl, mash the avocados and mayonnaise until smooth. Stir in the tomato, jalapeno, cilantro, lemon juice and salt. Serve with corn chips. Yield: 1-1/2 cups.
Editor's Note: Wear disposable gloves when cutting hot peppers; the oils can burn skin. Avoid touching your face.

"We found this guacamole to be rather bland -- wished I'd bought more jalepeno peppers. I don't like things hot and spicy normally, but this needed more kick. The mayonnaise was the prominent flavor."
