Walnut-Date Quick Bread
TOTAL TIME: Prep: 10 min. + standing Bake: 1 hour
YIELD: 1 loaf.
I can remember my Aunt Emma making this bread, and I loved it. This recipe must be 60 or more years old.
Ingredients

1 cup chopped dates

1 cup boiling water

3 tablespoons butter, softened

1 cup packed brown sugar

1 egg

1-3/4 cups all-purpose flour

1 teaspoon baking soda

1/4 teaspoon salt

1 cup chopped walnuts
Directions

In a small bowl, combine the dates and water; let stand for 15 minutes (do not drain). In a bowl, cream butter and brown sugar; add egg and mix well. Combine flour, baking soda and salt; add to the creamed mixture alternately with dates and liquid. Stir in walnuts.

Pour into a greased 8x4-in. loaf pan. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.
