Vanilla French Toast Recipe

We discovered this recipe in Mexico. We couldn't figure out what made this French toast so delicious until we learned the secret was vanilla—one of Mexico's most popular flavorings. Since then, we've added a touch of vanilla to our waffle and pancake recipes. It makes them all very tasty. —Joe and Bobbi Schott, Castroville, Texas
TOTAL TIME: Prep/Total Time: 10 min. YIELD:2 servings

Ingredients

  • 2 eggs
  • 1/2 cup 2% milk
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
  • Pinch salt
  • 6 slices day-old bread
  • Maple syrup or cinnamon-sugar

Directions

  • 1. In a shallow bowl, beat eggs; add the milk, sugar, vanilla and salt. Soak bread for 30 seconds on each side. Cook on a greased hot griddle until golden brown on both sides and cooked through. Serve with syrup or cinnamon-sugar. Yield: 2 servings.

"This is an excellent basic recipe. I've used one like this for years and it's delicious. I have switched up variations from time to time. I sometimes use Kings Hawaiian Bread, cinnamon raisin bread, Texas toast. Would like to try brioche, but havn't found any yet. I have used egg nog and that is the bomb. This a customable recipe"

"I have always used vanilla in my French toast. French or Italian bread is very good to use but if you can get Brioche, use it! I don't always use cinnamon but always use Equal, my husband is diabetic. I do use 2% milk but sometimes half and half or whipping cream. French toast is a fav of mine."

"Very similar to the French Toast and pancakes I was already making, so I knew it would be good. Sometimes I substitute Allspice or cut down on the Cinnamon and use both Allspice & Cinnamon. Butter Pecan Syrup is also very good on top of the FT or pancakes."

"First time adding vanilla and sugar to french toast for me. I'll definitely make this again but the recipe was misleading in that it says it makes six slices of toast. Unless the bread is postage-stamp size or the two eggs in question are ostrich eggs, I'll need to double everything again :) I got two slices of it. Only complaint but a very minor one."

"I've always made it this way since i was a kid , i'm now 59. See what you've been missing. Now top it off with some homemade syrup like i do. Can't get enough blueberry syrup in my house but make it withany kind of fruit ! I also make pancakes the same way. Alway's great ! Be prepared to make lot's, everyone loves em !"

"I've been making my french toast with vanilla for years. I also add a bit of cinnamon to my egg mixture. Another great way for delicious french toast is to buy some great cinnamon raisin bread and slice it about 3/4" thick and use the basic french toast mix with vanilla, of course. I use vanilla in pancakes and waffles too."
