Tuscan Chicken Recipe
- 4 boneless skinless chicken breast halves (5 ounces each)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 garlic cloves, sliced
- 2 teaspoons dried rosemary, crushed
- 1/2 teaspoon rubbed sage
- 1/2 teaspoon dried thyme
- 2 tablespoons olive oil
- 1. Flatten chicken to 1/2-in. thickness; sprinkle with salt and pepper.
- 2. In a large skillet over medium heat, cook and stir the garlic, rosemary, sage and thyme in oil for 1 minute. Add chicken; cook for 5-6 minutes on each side or until chicken juices run clear. Yield: 4 servings.

"My husband & I loved this simple recipe. I did change it up a little. I put salt & pepper on the chicken breast, then I combined all the herb ingredients with the olive oil. I poured the mixture over the chicken breast and left it to marinate for 20 minutes. Then I scraped the herbs & oil off of the chicken and proceded with the regular instructions. It turned out delicious! Oh, and I used fresh Rosemary, instead of dried. Wonderful!"
"I made this for my husband and 2 year old son and it was a hit. I was a little skeptical at first that all the spices might be too much, but they all worked well. I added one extra clove of garlic, and I used full size boneless skinless chicken breasts. It still worked out well--I just had a longer cooking time. I didn't think my 2 year old would like this because of all the herbs, but he gobbled it up. :) I will be making this again for sure!"
