Turnip Slaw Recipe
- 1/4 cup chopped sweet red pepper
- 1/4 cup thinly sliced green onions
- 1/4 cup mayonnaise
- 1 tablespoon vinegar
- 2 tablespoons sugar
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 4 cups shredded peeled turnips
- 1. In a bowl, combine all ingredients except turnips. Pour over turnips and toss well to coat. Refrigerate several hours for flavors to blend. Yield: 4 servings.

"I am a newly diagnosed diabetic looking for things I can eat and I saw this recipe and tried it. I like it much better than regular coleslaw. Green onion were out of season so I did change and fix 1/2 a white onion and the onion was a bit much so I would certainly fix it again but use less onion. It is going in my recipe box so that should tell you something."

"I made this slaw and put it on the table for dinner without saying anything about it. My family helped themselves to their portion and ate without comment. As my son was getting his second serving, I couldn't contain myself any longer so I asked, "How do you like the turnips?"His reply was "Um, good," but my other son asked, "What turnips?" My husband piped up, "Where's the turnips?" They didn't even realize they had been eating them!
