  • 1 cup uncooked small pasta shells
  • 1 pound lean ground turkey
  • 2 medium onions, chopped
  • 2 garlic cloves, minced
  • 3 cans (14-1/2 ounces each) reduced-sodium chicken broth
  • 2 cans (15 ounces each) white kidney or cannellini beans, rinsed and drained
  • 2 cans (14-1/2 ounces each) Italian stewed tomatoes
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon fennel seed, crushed
  • 1 teaspoon pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes

  1. Cook pasta according to package directions. Meanwhile, in a large stock pot, cook turkey, onions over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the broth, beans, tomatoes and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes.
  2. Drain pasta and add to the soup. Cook 5 minutes longer or until heated through. Yield: 10 servings.

"I followed the recipe pretty much as given but did not add the fennel. All the seasonings are overpowering the flavor of the soup. I will make it again as I am always looking for recipes with ground turkey but will cut back on the seasonings."

"Very tasty soup, just perfect for this extremely cold weather we've been having. This recipe worked well in the crockpot. Made a few substitutions: cut-up turkey rather than ground turkey, broth from the roasted turkey in place of the canned chicken broth. Will make this again!"

"An easy and flavorful soup that really hits the spot. Instead of the white kidney or cannellini beans suggested, I substituted navy beans (the most similar bean that I had on hand). I really enjoyed the flavor and next time I think I will use bulk turkey sausage instead of ground turkey, similar to what hchambers did, because I think that will just really enhance the flavor."

"This is a very flavorful soup and quite versatile. I did not add the fennel and used Italian seasoning as opposed to the individual spices. I also reduced the turkey to 1/2lb and used 1/2lb of ground sausage which was very tasty. This is a great recipe that can easily be adjusted to your family's tastes."

"dinner is especially challenging after working all day and coming home to hungry kids and husband. This soup was so easy to throw together and the best part was that the ingredients are mostly pantry items I had on hand. It was hearty, flavorful and delicious. Seal of approval from my hungry troops! Another bonus is I now have a new ground turkey recipe to add to my repertoire as I am trying to use less red meat and more lean protein."

"I browned a little bit of pork sausage (1/4 lb or so) with the onions and garlic, then deglazed with about 1/3 c. of white wine. After that I added our leftover turkey and remaining ingredients, minus the fennel. Very good. The sausage kicked up the flavor a notch."

"I actually left the fennel out, but after reading these reviews, I think I'll put it in next time. I thought it was good even without. I put in extra garlic and decreased the oregano a bit. Also left out the extra salt."
