Tropical Sweet Potato Bake Recipe

Pineapple turns this comforting casserole into a side dish with a tropical twist. It's sure to be a big hit during the holidays when served along with roasted poultry or a festive baked ham.
TOTAL TIME: Prep: 15 min. Bake: 45 min. YIELD:8-10 servings

Ingredients

  • 3 cups cooked mashed sweet potatoes
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • Dash salt
  • TOPPING:
  • 1/4 cup sugar
  • 1/4 cup all-purpose flour
  • 1 can (8 ounces) crushed pineapple, undrained
  • 1/4 cup butter, melted
  • 2 eggs

Directions

  • 1. In a large bowl, combine the first seven ingredients. Pour into a lightly greased 9-in. square baking dish. Combine the topping ingredients; pour over potato mixture.
  • 2. Bake, uncovered, at 350° for 45-50 minutes or until a thermometer reads 160°. Refrigerate leftovers. Yield: 8-10 servings.
