After I retired, I persuaded my wife to let me do most of the food preparation. This refreshing salad is simple to put together, but the results are fantastic.—Wendell Obermeier, Charles City, Iowa

  • 8 thick tomato slices
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons sugar
  • 8 thin sweet onion slices
  • 1/2 cup vinegar
  • 8 green pepper rings
  • Chopped fresh parsley


  • Place tomato slices on paper towel to drain excess moisture; place on
  • serving plate. Combine salt, pepper and sugar; lightly sprinkle half
  • over tomatoes. Top each tomato with an onion slice. Sprinkle 1
  • tablespoon of vinegar over each onion. Sprinkle remaining salt
  • mixture over onions. Cover and refrigerate at least 30 minutes
  • before serving. Garnish with green pepper rings and parsley. Yield:
  • 8 servings.
