Tomatoes Supreme Salad Recipe
After I retired, I persuaded my wife to let me do most of the food preparation. This refreshing salad is simple to put together, but the results are fantastic.—Wendell Obermeier, Charles City, Iowa
- 8 thick tomato slices
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 teaspoons sugar
- 8 thin sweet onion slices
- 1/2 cup vinegar
- 8 green pepper rings
- Chopped fresh parsley
- 1. Place tomato slices on paper towel to drain excess moisture; place on serving plate. Combine salt, pepper and sugar; lightly sprinkle half over tomatoes. Top each tomato with an onion slice. Sprinkle 1 tablespoon of vinegar over each onion. Sprinkle remaining salt mixture over onions. Cover and refrigerate at least 30 minutes before serving. Garnish with green pepper rings and parsley. Yield: 8 servings.
