Tomatoes Supreme Salad Recipe

Ingredients

  • 8 thick tomato slices
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons sugar
  • 8 thin sweet onion slices
  • 1/2 cup vinegar
  • 8 green pepper rings
  • Chopped fresh parsley

Nutritional Facts

1 serving (1 each) equals 17 calories, trace fat (trace saturated fat), 0 cholesterol, 297 mg sodium, 4 g carbohydrate, 1 g fiber, trace protein.

Directions

  1. Place tomato slices on paper towel to drain excess moisture; place on serving plate. Combine salt, pepper and sugar; lightly sprinkle half over tomatoes. Top each tomato with an onion slice. Sprinkle 1 tablespoon of vinegar over each onion. Sprinkle remaining salt mixture over onions. Cover and refrigerate at least 30 minutes before serving. Garnish with green pepper rings and parsley. Yield: 8 servings.
