Tomato Tortellini Soup Recipe

No one will guess that you cheated by using canned tomato soup. This lovely soup tastes homemade all the way! —Sandra Fick, Lincoln, Nebraska
TOTAL TIME: Prep/Total Time: 25 min. YIELD:10 servings

Ingredients

  • 1 package (9 ounces) refrigerated cheese tortellini
  • 2 cans (10-3/4 ounces each) reduced-sodium condensed tomato soup, undiluted
  • 2 cups vegetable broth
  • 2 cups 2% milk
  • 2 cups half-and-half cream
  • 1/2 cup chopped oil-packed sun-dried tomatoes
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/2 cup shredded Parmesan cheese
  • Additional shredded Parmesan cheese, optional

Directions

  • 1. Cook tortellini according to package directions.
  • 2. Meanwhile, in a Dutch oven, combine the soup, broth, milk, cream, tomatoes and seasonings. Heat through, stirring frequently. Drain tortellini; carefully add to soup. Stir in cheese. Sprinkle each serving with additional cheese if desired. Yield: 10 servings (2-1/2 quarts).

"This was very good. I used a dried cheese tortellini, which worked out fine. I also added a couple of tablespoons of tomato paste which really enhanced the tomato flavor. Garlic bread on the side was a great addition. Will be making this often!"

"This soup is very good and worthy of five stars. However, I make a nearly identical recipe using Campbell's Slow Kettle style Tomato and Sweet Basil Bisque, add canned petite diced tomatoes that have been drained and serve it with shaved Parmesan cheese on top. Delish!"

"FollI used Trader Joe's vegetable broth which gave it a weird flavor I think. So next time I'd use chicken broth. I skipped tomatoes & used 1/4 cup half and half with nearly 8 oz. cream, & added 1/2 tsp. seasoned salt. Also used Campbell's 100% natural tomato with basil soup. No corn syrup for us! Followed my own recommendations, adding 3 links browned turkey Italian sausage, cut into small pieces. Excellent became outrageously terrific!"

"Some great modifications if you're interested in making this a little more hearty.

I used 20 oz. of cheese tortellini and cooked and diced 2 chicken breasts (1lb) seasoned with Mrs. Dash. Instead of 2 cups ½ and ½, I used 1 C heavy whipping cream, 4 oz. lite sour cream, and 4 oz. ricotta cheese. Instead of garlic and onion powder, I sautéed ½ white onion and 3 cloves of minced garlic in EVOO. I also added 2 chopped fresh tomatoes and sautéed mushrooms as garnish (sautéed in same pan as onion and garlic). I didn't add any salt but added plenty of fresh ground pepper. Didn't need the PARM cheese with the ricotta. Lastly, I used lots of chopped fresh basil and basil leaves as garnish.

"Made this for our annual fund-raiser and it was a hit. I gave it 4 stars since I made a couple of changes per previous reviews. I used chicken broth instea of vegetable and 2/3 cup of diced tomatoes. Served it out of a slow cooker and brought only 1 bowl home so I could eat some! "I would have given it 2 stars because this did not impress me at all. I felt there was way too much milk/cream and I didn't use as much as the recipe calls for. The tomato soup-iness of it clashed with the tortellini. I would suggest using less milk and a different pasta like macaroni or something without filling.

I gave it a 3 because it went over well with my sister and her husband. She loved it and demanded the recipe--one because she thought it was delicious and two because it was quick and easy to make. She, too, recommended less milk/cream."

"This was good, though I made a few changes. I didn't add the dried tomatoes, because I knew my kids would not like them. I threw in a half bag of frozen broccoli instead. "The whole fam loved this and is was SO simple and easy! I, too would increase the tortellini next time. My package was about 19 oz and I wished I would have put it all in. Next time! The kids loved this too and ate it up. We had it with Parmesan rolls. I didn't have any 2% milk on hand, so I used a can of evaporated 2% milk and filled up the rest of my 2-cup measure with fresh 1% milk. So good!!"

"Very good, my husband and i agree it's a keeper. I added twice as much tortellini as called for fresh chopped onion and fresh minced garlic. Sauteed onion, sun dried tomatoes and garlic together then added balance of the ingredients with 1/4 tsp of herbs de provence, also used 1/4 cup of mexican cheese blend, and extra parm. My company raved about it again and again. I followed the recipe as is to give it a shot.
