Ingredients

  • 2 plum tomatoes, seeded and chopped
  • 3/4 cup thinly sliced red onion, quartered
  • 1 teaspoon julienned fresh basil leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 medium ripe avocados, halved and pitted
  • 2 teaspoons lime juice

Directions

  1. In a large bowl, gently toss the tomatoes, onion, basil, salt and pepper. Spoon into avocado halves; drizzle with lime juice. Yield: 4 servings.

"These are sooo good, look impressive and super easy. The only change I made was I didn't use the lime juice and instead used Italian dressing. My husband likes to add a sprinkling of feta cheese to his."

"My new favorite salad recipe. Now have these ingredients always on hand. So simple. I exchange the lime for apple cider vinegar. Same result. You can also change the basil out for diced jalapenos to give it some extra zip!"
