I'm a vegetarian, and this is a tasty, quick and healthy lunch I could eat for every meal. At my house, we call these sandwiches HATS: hummus, avocado, tomato and shallots. They're all ingredients I almost always keep in stock. —Sarah Jaraha, Moorestown, New Jersey

Ingredients

  • 1/2 medium ripe avocado, peeled and mashed
  • 4 slices whole wheat bread, toasted
  • 1 medium tomato, sliced
  • 2 tablespoons finely chopped shallot
  • 1/4 cup hummus

Nutritional Facts

1 sandwich equals 278 calories, 11 g fat (2 g saturated fat), 0 cholesterol, 379 mg sodium, 35 g carbohydrate, 9 g fiber, 11 g protein. Diabetic Exchanges: 2 starch, 2 fat.

Directions

  1. Spread avocado over two slices of toast. Top with tomato and shallot. Spread hummus over remaining toasts; place over tops. Yield: 2 servings.
