No one can resist this classic cool and creamy dessert. It's quick to prepare but can be made ahead for added mealtime convenience.

Ingredients

  • 2 cups cold milk
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 1 cup heavy whipping cream
  • 3 tablespoons confectioners' sugar
  • 18 ladyfingers, split
  • 2-1/2 teaspoons instant coffee granules
  • 1/2 cup boiling water
  • 1 tablespoon baking cocoa

Directions

  1. In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. In a small bowl, beat cream until it begins to thicken. Add confectioners' sugar; beat until soft peaks form. Fold into pudding; cover and refrigerate.
  2. Arrange half of the ladyfingers cut side up in an 11-in. x 7-in. dish. Dissolve coffee granules in boiling water; drizzle half over the ladyfingers. Spread with half of the pudding mixture. Repeat layers. Sprinkle with cocoa. Refrigerate until serving. Yield: 6 servings.

"I try not to use boxed pudding mixes when I make desserts, but I had promised to make something to bring to a dinner party tonight, and it's so hot here that I didn't want to turn on a burner, let alone the oven. I brewed extra coffee, a version from a local roaster flavored with caramel and rum, in the morning so I'd have enough to sprinkle over the ladyfingers. Instead of dusting the surface with cocoa powder I grated a couple of ounces of 72% cacao chocolate over it. Told the dinner guests that they were guinea pigs, and if it was really bad they should just tell me, and we would feed the leftovers to the dog. Instead I received two requests for the recipe. Even my coffee-hating daughter loved it."

"You could probably find a better recipe with higher quality/homemade lady fingers and/or better filling, but for a quick 20 minute recipe that is very satisfying... this one is a great solution."

"I made this for Christmas and it was a huge hit. I couldn't find ladyfingers so I used a family sized pound cake cubed instead and layered it that way. I also used a trifle dish and the presentation was pretty."

"I have never made Tiramisu before, but compared to some recipes, this one seemed easier and cheaper. This was very good and a nice, light, not overly sweet dessert. Instead of using whipping cream, I followed directions except I used an 8 ounce container of fat free whipped topping which made the recipe even simpler. I would definitely make this again."
