Texan Ranch Chicken Casserole Recipe

Ingredients

  • 1 large onion, finely chopped
  • 2 celery ribs, finely chopped
  • 1 medium green pepper, finely chopped
  • 1 medium sweet red pepper, finely chopped
  • 1 tablespoon canola oil
  • 1 garlic clove, minced
  • 3 cups cubed cooked chicken breast
  • 1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of celery soup, undiluted
  • 1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
  • 1 can (10 ounces) diced tomatoes and green chilies, undrained
  • 1 tablespoon chili powder
  • 12 corn tortillas (6 inches), cut into 1-inch strips
  • 2 cups (8 ounces) shredded reduced-fat cheddar cheese, divided

Directions

  • In a large nonstick skillet coated with cooking spray, saute the onion, celery and peppers in oil until crisp-tender. Add garlic; cook 1 minute longer. Stir in the chicken, soups, tomatoes and chili powder.
  • Line the bottom of a 3-qt. baking dish with half of the tortilla strips; top with half of the chicken mixture and 1 cup cheese. Repeat layers. Bake, uncovered, at 350° for 30-35 minutes or until bubbly. Yield: 8 servings.

Nutritional Facts 1 cup equals 329 calories, 12 g fat (5 g saturated fat), 65 mg cholesterol, 719 mg sodium, 31 g carbohydrate, 3 g fiber, 26 g protein. Diabetic Exchanges: 3 lean meat, 1-1/2 starch, 1 vegetable, 1 fat.

My 3 year old inhaled this! It was a little tedious, but ultimately easy. I shredded the chicken instead and it was equally delicious! I also only put it in the oven for 20 minutes, which kept the tortillas from getting soggy. I will make it again and again. Thanks so much!

I prepared this recipe tonight and it was a huge hit. DH said it was a keeper. It is a very easy recipe to prepare and is very tasty. I used the mild Rotel tomatoes instead of the hotter original Rotel. We loved this dish and I will definitely fix this again.

I sure did enjoy this casserole. I didn't have canned soups so I just added 1 c each of milk and broth with 1/3 c of flour. I had on hand only canned tomatoes so that's what I added. Reduced the chili powder. It was perfect for us. Probably not as creamy. I just wrote this review to let others know that you can still make this casserole even if you don't have canned soup

This recipe had good flavor. I ate it over a bed of rice. I think next time I'll try without the corn tortillas.

I have made this twice. I know that this is supposed to be a healthy recipe with the reduced-fat soups and cheese. The first time I made it I had the full-fat soups on hand, so I used those. The second time i bought the reduced-fat versions. We like it much better with the full-fat versions, it was much creamier. No leftovers the first time. Lots left the second. If I make it again I will make the full-fat version.

OMG we just finished this recipe . I had to double it for my crowd . it is simply delishious !!!!!!!!!!!!! I did cut don on the cheese as we have a cheese hater

(imagine that) But even he cleaned his plate . I will be adding this to my regulars , as it is easy and really good too .
