Tart Cranberry Butter Recipe
- 10 cups fresh or frozen cranberries
- 2/3 cup apple juice
- 1/2 to 3/4 cup sugar
- 1 cup maple syrup
- 1/2 cup honey
- 1/2 teaspoon ground cinnamon
- 1. In a saucepan over medium heat, bring the cranberries, apple juice and sugar to a boil. Cook 10-15 minutes or until all berries have popped, stirring occasionally. Remove from heat; cool slightly. Process in batches in a blender or food processor until smooth.
- 2. Return cranberry mixture to the saucepan; add remaining ingredients. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, 10 minutes or until thickened, stirring occasionally. Cover and chill 8 hours or overnight. Store in an airtight container in the refrigerator up to 1 week or freeze up to 3 months. Yield: 5 cups.

"I made this cranberry butter as an alternative to butter for things like English muffins and bagels. It is wonderful! It has taste, texture, aroma and color. My husband likes eating plain. He says it is better than regular cranberry sauce. My daughter, who is extremely, picky at eating, really likes it also. The batch makes enough to give some as gifts, which I am doing. To be honest, I skipped the blender section and just mashed and stirred the berries really well. It was a time and mess thing. Sorry. But, hey, this recipe is terrific!"

As far as canning, I have successfully canned plum and apple butters so I don't see why you couldn't can this one. "Haven't made this but wanted to comment that fruit butters do not contain actual butter to those who are asking where the butter is. I have made various fruit butters: apple,peach, pear, quince and pumpkin.I never thought of cranberry and this sounds tasty.I definitely want to make this!"

"To the first two reviewers - have you never heard of apple butter? There is no butter in that either. It's a spread that can be used in place of butter on toast, etc. I plan to try this one. It will make a nice holiday season hostess gift."
"I thought the same thing at 1st glance but realized it's like apple butter, pumpkin butter, etc. They're slow cooked down concentrated versions of the fruit. Tart Cranberry "Butter" would probably work. Looks good - I'm going to give it a try."
