Tangy Mashed Potatoes Recipe
- 4 pounds potatoes, peeled and cubed (about 12 medium)
- 1-1/2 cups (12 ounces) reduced-fat plain yogurt
- 4 green onions, minced
- 2 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1. Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender.
- 2. Drain potatoes; mash with yogurt, onions, butter, salt and pepper. Yield: 13 servings.
3/4 cup: 114 calories, 2g fat (1g saturated fat), 6mg cholesterol, 216mg sodium, 21g carbohydrate (3g sugars, 1g fiber), 3g protein. Diabetic Exchanges: 1-1/2 starch.
