Tangy Carrot Coins Recipe
- 1 pound carrots, sliced
- 3 tablespoons butter
- 1 tablespoon brown sugar
- 1 tablespoon Dijon mustard
- 1/8 teaspoon salt
- 1. Place carrots in a large saucepan. Add 1 in. of water; bring to a boil. Reduce heat; cover and simmer for 7-9 minutes or until crisp-tender. Drain. Add remaining, ingredients; cook and stir over medium heat for 1-2 minutes or until sauce is thickened and carrots are coated. Yield: 4 servings.
1/2 cup: 142 calories, 9g fat (5g saturated fat), 23mg cholesterol, 296mg sodium, 15g carbohydrate (11g sugars, 3g fiber), 2g protein.
