I got this recipe from a friend years ago and still make these cheesy sandwiches regularly. I serve them for dinner along with a steaming bowl of soup or fresh green salad. Any leftovers taste even better the next day for lunch. A helpful hint: Plain refrigerated biscuits seal together better than buttermilk types. —Jan Schmid Hibbing Minnesota

Ingredients

  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1 envelope taco seasoning
  • 2 tubes (16.3 ounces each) large refrigerated flaky biscuits
  • 2 cups (8 ounces) shredded cheddar cheese

Nutritional Facts

1 each: 646 calories, 34g fat (13g saturated fat), 67mg cholesterol, 1775mg sodium, 55g carbohydrate (7g sugars, 2g fiber), 26g protein .

Directions

  1. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the taco seasoning and prepare according to package directions. Cool slightly.
  2. Flatten half of the biscuits into 4-in. circles; place in greased 15-in. x 10-in. x 1-in. baking pans. Spoon 1/4 cup meat mixture onto each; sprinkle with 1/4 cup shredded cheese. Flatten the remaining biscuits; place on top and pinch edges to seal tightly. Bake at 400° for 15 minutes or until golden brown.
    Freeze option: Freeze cooled pastries in a resealable plastic freezer bag. To use, microwave pastry on high on a microwave-safe plate until heated through.
    Yield: 8 servings.

"We made this recipe with crescent roll dough (we prefer the taste). The taste was fantastic, but the amount of prep work for the final product was not justified. It took us almost an hour total to make the puffs. My fiance has been calling them glorified Hot Pockets."

"I love this recipe, however, I have tweaked it a bit to make it into a casserole. I line a pie plate or a larger dish if making it for more people, with the biscuits, add the taco meat, lots of cheese and then lay the remaining biscuits over the top and bake it. When it's done, just slice in individual servings like a lasagna. Everyone loves this recipe, and it's so easy to make. The casserole actually serves more people and takes less time to do. I've been making it this way for over 13 years now and it's always a crowd pleaser, even for the pickiest of eaters!!!"
