Sweet-Sour Broccoli Salad Recipe

"This refreshing medley is a good way to get broccoli into your meals," notes Bea Ramirez of Kansas City, Kansas. Just three simple ingredients create the tangy-sweet dressing that coats this crunchy combination.
TOTAL TIME: Prep: 15 min. + chilled YIELD:8 servings

Ingredients

  • 4 cups broccoli florets
  • 1 cup peanuts
  • 1 cup raisins
  • 1/2 cup chopped onion
  • 1 cup mayonnaise
  • 2 tablespoons cider vinegar
  • 2 tablespoons sugar

Directions

  • 1. In a bowl, combine the broccoli, peanuts, raisins and onion. In a small bowl, combine the mayonnaise, vinegar and sugar; pour over vegetables and toss to coat. Cover and refrigerate for at least 2 hours. Yield: 8 servings

"DELICIOUS! I used a 12 oz bad of florets which has 6 cups in it. I used only 1/2 cup of peanuts (which was plenty) and fat free mayonnaise. So good. Even my husband (who is not a big vegetable eater) enjoyed it!

"Great recipe! I've never tried it with peanuts so just did broccoli, sunflower seeds, raisins and bacon bits. Even better when you make 24 hours ahead, the broccoli really has time to soften and absorb the dressing."
