Ingredients

  • 1 can (15 ounces) cut sweet potatoes, drained and quartered lengthwise
  • 2 cups cubed fully cooked ham
  • 1 cup (4 ounces) shredded cheddar cheese

Nutritional Facts

1 cup: 411 calories, 19g fat (11g saturated fat), 89mg cholesterol, 1482mg sodium, 33g carbohydrate (19g sugars, 4g fiber), 26g protein.

Directions

  1. In a greased 1-qt. baking dish, layer half of the sweet potatoes, ham and cheese. Repeat layers. Cover and bake at 350° for 20 minutes. Uncover; bake 8-10 minutes longer of until cheese is melted. Yield: 2-3 servings.

"SO good. It's incredibly simple, satisfying, and hearty. It is already a family favorite - and is fabulous for any gluten free folks! The only thing I did differently was used fresh sweet potatoes/yams. I skinned them, cut them up and boiled them till they were soft but not fall apart soft. Will make again."

"I made this with some leftover turkey ham and it was a smash hit! I love how easy and quick it is to put together on short notice! I also tried sliced kilbasa. It was good, but next time I will add a little butter and brown sugar as the kilbasa flavor was a bit much and I missed the sweet potato taste...but good nonetheless!"
