Ingredients

  • 1 can (15 ounces) cut sweet potatoes, drained and quartered lengthwise
  • 2 cups cubed fully cooked ham
  • 1 cup (4 ounces) shredded cheddar cheese

1 serving (1 cup) equals 411 calories, 19 g fat (11 g saturated fat), 89 mg cholesterol, 1,482 mg sodium, 33 g carbohydrate, 4 g fiber, 26 g protein.

Directions

  1. In a greased 1-qt. baking dish, layer half of the sweet potatoes, ham and cheese. Repeat layers. Cover and bake at 350° for 20 minutes. Uncover; bake 8-10 minutes longer of until cheese is melted. Yield: 2-3 servings.

SO good. It's incredibly simple, satisfying, and hearty. It is already a family favorite - and is fabulous for any gluten free folks! The only thing I did differently was used fresh sweet potatoes/yams. I skinned them, cut them up and boiled them till they were soft but not fall apart soft. Will make again.

I made this with some leftover turkey ham and it was a smash hit! I love how easy and quick it is to put together on short notice! I also tried sliced kilbasa. It was good, but next time I will add a little butter and brown sugar as the kilbasa flavor was a bit much and I missed the sweet potato taste...but good nonetheless!
