Sweet Potato Bread & Pineapple Butter Recipe

I hope you like my sweet potato bread recipe as much as I do. The combination of tangy pineapple with this spicy sweet loaf is delicious! —Diane Goss, Chester, Virginia
TOTAL TIME: Prep: 20 min. Bake: 50 min. + cooling YIELD:16 servings


  • 1-3/4 cups all-purpose flour
  • 1-1/2 cups sugar
  • 1-1/2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 cup mashed sweet potatoes
  • 1/2 cup canola oil
  • 1/3 cup water
  • 1/2 cup butter, softened
  • 1 can (8 ounces) crushed pineapple, well drained


  • 1. In a large bowl, combine the first seven ingredients. In a small bowl, combine the eggs, potatoes, oil and water. Stir into dry ingredients just until moistened.
  • 2. Transfer to a greased 9-in. x 5-in. loaf pan. Bake at 350° for 50-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
  • 3. In a small bowl, combine butter and pineapple. Serve with bread. Yield: 1 loaf (16 slices) and 1 cup butter.

"Delicious and very moist. My family loved it. Instead of the pineapple butter, I mixed 8 oz. 1/3 less fat cream cheese (softened) and the can of pineapple drained. If mixture is too thick, just add a few drops of that pineapple juice to make it spreadable. Yummy!!!!!!!"

"Very, very good! Hubby is my critic on all new recipes. Says this is a keeper. Instead of 1/3 cup of water I used orange juice. Baking time was 1 hour 10 minutes in my oven. Very moist."

"Excellent bread! As another reviewer suggested I reduced the sugar to one cup. I substituted 1/4 teaspoon cloves and 1/4 teaspoon allspice for the nutmeg and added about a cup of walnuts. I didn't make the pineapple butter ... the bread is yummy, moist and sweet all on its own. I bake a lot of quick breads and this one will definitely be placed in the tried and true file!"

"Couldn't stop picking off the delicious crusty pieces on top! I would recommend mixing a tablespoon of pineapple butter first to see if you'll like it. I found it to be overpowering, and the bread was too good to cover up the flavor."

"This bread was very moist! I did make a couple of changes. I only used 1 cup of sugar and added some extra sweet potato that I had left over (1/2 cup more). I took this bread to a gathering and couldn't even sit down before I was asked about the recipe. It was gone pretty fast for someone coming late to the gathering. Have already made this 3 other times. It's a winner."

"very easy and yummy!! Cooked the sweet potato in the microwave. the bread turned out great. baked it in a special "fall" loaf pan from William Sonoma.

It is very important to drain the pineapple completely! The butter will be hard to mix and will separate if not drained well."

"This bread is really delicious, but I think it's too much batter for just one loaf. Mine expanded quite a bit out of the top of the pan and the center took much longer than the stated cooking time to get done. Next time, I'll split it into two loaves. We weren't crazy about the pineapple butter, either - The taste wasn't great, and the consistency wasn't attractive. Maybe I did something wrong? My family preferred a pineapple cream cheese mixture I made for it. Anyway, the bread itself is wonderful and I'll definitely make it again with those modifications."
