Sweet-and-Sour Supper

My mother shared this recipe, which I've been making for my family for years. The homemade sweet-and-sour sauce is the key to this dish's success. —Dorothy Reimer, Dewberry, Alberta
Ingredients

1 pound ground beef

1-1/2 teaspoons chili powder

1-1/2 teaspoons dried oregano

1-1/2 teaspoons salt

Pepper to taste

3 cups cooked long grain rice

1 can (7 ounces) mushroom stems and pieces, drained

1 medium green pepper, sliced

SAUCE:

1 cup plus 2 tablespoons sugar

1/3 cup cornstarch
-
2-1/2 cups cold water
-
1/3 cup white vinegar
-
1/3 cup ketchup

1-1/2 teaspoons salt

Pepper to taste
Directions

Preheat oven to 350°. In a large skillet, cook beef over medium heat until meat is no longer pink; crumble meat; drain. Stir in the chili powder, oregano, salt and pepper.

In a greased 3-qt. baking dish, layer the rice, beef mixture, mushrooms and green pepper; set aside. In a large saucepan, combine sugar and cornstarch; stir in the remaining sauce ingredients until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened.

Pour sauce over layered ingredients. Bake, uncovered, for 30 minutes or until heated through.
