Sweet 'n' Spicy Chicken Recipe

Sweet 'n' Spicy Chicken Recipe

My husband and three children love this tender chicken that has a spicy sauce. Peach preserves add just a touch of sweetness, while taco seasoning and salsa give this dish some kick. This entree can be made even zippier yet by adding more taco seasoning and using spicier salsa. —Sheri White, Higley, Arizona

"This was an easy, good dinner. I served it with a brown rice/quinoa mix. My daughter is not a fan of spicy foods, so she was worried it would be too spicy. I used a mild-ish salsa. We both liked it, and I'll probably make it again."

"Great flavor with the peachy sweetness added to salsa and so fast to put together! I love this recipe when time is short and dinner time is close!! If you use a Minute rice, and steam some broccoli, you have a meal in minutes!"

"Another winner. The chicken was very tender. The peach preserves "mellowed out" the salsa without tasting strongly of peach flavor. It combined with rice well and was an overall very tasty and filling dish with a mild kick to it. It was an easy and quick to prepare meal. Really enjoyed it."

"This was good! Only sub was apricot for peach preserves since that's what I had. Always happy to find a new way to dress up chicken and this is def a keeper. Only downside was my two-year old didn't like it...but she's picky & at least she liked the rice I made with it so didn't really have to make a whole other meal ;)"

I also didn't have peach preserves on hand, so I used cranberry sauce, as others suggested. Try this! It's a fast dinner fix, and you probably have everything already in your kitchen!"

When I'm pressed for time I have sprinkled taco mix on cooked chicken and left in a bag all day. When ready, I just followed the rest of the recipe. Voila, instant dinner. And oh so GOOD."
