There’s no faster way to get a party started than with these bacon-wrapped poppers. Make them ahead and bake just before serving. Even the hot pepper intolerant will love them.—Dawn Onuffer, Crestview, Florida

Ingredients

  • 6 jalapeno peppers
  • 4 ounces cream cheese, softened
  • 2 tablespoons shredded cheddar cheese
  • 6 bacon strips, halved widthwise
  • 1/4 cup packed brown sugar
  • 1 tablespoon chili seasoning mix

  • 1. Cut jalapenos in half lengthwise and remove seeds; set aside. In a small bowl, beat cheeses until blended. Spoon into pepper halves. Wrap a half-strip of bacon around each pepper half.
  • 2. Combine brown sugar and chili seasoning; coat peppers with sugar mixture. Place in a greased 15x10x1-in. baking pan.
  • 3. Bake at 350° for 18-20 minutes or until bacon is firm. Yield: 1 dozen.

I doubled the recipe and made the first batch exactly as written and then added 1 tablespoon real bacon bits to the cheese mixture in the 2nd batch. "I place my stuffed without Bacon wrapped peppers on a cookie sheet, freeze solid and then place in freezer zip lock bag for future use within three months. To bake: thaw peppers 7-10 minutes, wrap with Bacon or thin sliced deli-meats and bake as directed on a broiler pan since the peppers sit perfect in grooves without tilting or oozing melted cheese."

"These were absolutely wonderful! I made them according to the recipe and they turned out great! I've made them several times and brought them to parties and every time I get requests for the recipe. It's also the appetizer I get the most requests to bring to a party. I didn't use chili powder but rather bought the dry packet of chili seasoning (as that was what I assumed the recipe was suggesting) and mixed that with the brown sugar. I think it adds a lot more depth of flavor than chili powder alone."

Huge hit and has already been requested for the next party."

"These have a lot of potential but they weren't quite perfect. I thought "chili seasoning" meant the packets of seasoning mix, such as McCormick's- I wish I had used chili powder instead, I didn't think that the flavor of chili seasoning went very well with the brown sugar. I had a ton of brown sugar mixture left over so next time I'd make half the amount.

I also really agree with other user's comments about pre-cooking the bacon, and cooking the poppers on a rack in the pan."

I like them best right out of the oven, and don't want to ruin them by putting them in a crock pot to transport them. Does anyone have any transport ideas for me so I can take them places and kept them warm? We also like them with some heat so I always leave seeds from about 3 (doubled recipe) of the jalapenos for a little bit of a kick, but not too hot!"
