- 3 medium ripe avocados, peeled
- 1 can (15 ounces) white kidney or cannellini beans, rinsed and drained
- 1/4 cup finely chopped onion
- 1/4 cup minced fresh cilantro
- 2 tablespoons lime juice
- 1/8 teaspoon salt
- Tortilla chips
- In a small bowl, mash avocado with a fork. Stir in the beans, onion, cilantro, lime juice and salt. Serve with chips. Yield: about 3 cups.
