Summer squash and orange pepper give this herby side dish fantastic color. Remember this recipe—it complements almost any main dish. —Shirley Warren, Thiensville, WI
- 2 yellow summer squash, halved lengthwise and cut into 1/4-inch slices
- 1 medium sweet orange pepper, cut into thin strips
- 2 tablespoons butter
- 3 green onions, chopped
- 2 teaspoons brown sugar
- 2 teaspoons lemon juice
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Saute squash and orange pepper in butter in a large skillet until crisp-tender. Add remaining ingredients; cook 4-5 minutes longer or until sugar is dissolved and vegetables are tender. Yield: 4 servings.
