  • 2 cups cubed cooked chicken
  • 1 celery rib, thinly sliced
  • 1/2 cup seedless red grapes
  • 1/3 cup raisins
  • 1/2 cup mayonnaise
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/3 cup chopped pecans
  • Leaf lettuce
  • Tomato slices, optional

  1. In a large bowl, combine the chicken, celery, grapes and raisins. In a small bowl, combine the mayonnaise, salt and pepper. Add to chicken mixture; toss to coat. Stir in pecans. Serve on lettuce. Garnish with tomato if desired. Yield: 2-3 servings.

"Excellent chicken salad. I have made it several times. Tip: Rotisserie chicken gives the salad a lot more flavor. Also, 1/2 C. mayo is not enough. 3/4 C to 1C or the salad is rather dry. If using rotisserie chicken you may want reduce the salt."

"I make chicken salad all the time for a quick lunch. This is a great recipe that I try many variations to. I do not add the raisins but do add sugar, ground mustard and chives for more flavor. The great thing about this recipe is you can add things to it and it just gets better and better."
